When do you pick rhubarb?

When it is quite red.
Don't even think about it till that happens, or you will get a very nasty taste.

Personally I wouldn't.. I don't like it. But I think it's when the stalks are red.

I have only grown it once and it did not work but I would pick it when it is already red as against it being still green as I think it would be sweeter then.

They don't look like rhubarb plants, in your photo, Annlu! My in-laws always grow it in their previous garden. You cook it with some sugar. You can also cook it with apple slices. It's yummy cold over ice-cream or with Greek yogurt on top of it.
