What is your favourite cheese?

I have a bit of a thing for halumi cheese at the moment. love how you can fry it and use it differently to other cheeses.

Margaret River Cheeses from Western Australia make a really yummy baked ricotta cheese...I've never tried anything else like this and highly recommend it. I also love Nimbin cheese from northern New South Wales, and the Ashgrove cheeses from Tasmania.
