I made it a few nights ago and it was delicious - will publish it in a few weeks on recipeyum.com.au - it was quite an easy one.
I had visitors but forgot to put in most of the ingredients which I had sitting next to the hotplates - the cucumber, chicken, egg etc, but the soup was still delicious.
Am eating it now for lunch every day, made correctly with ingredients included!
It is slightly hot, and you can vary this by the amount of red curry paste you put in, and uses Carnation milk and soup as a base with vermicelli.
Finy, I am sorry but I have only just read your response... that will teach me for responding before reading the answers! You poor thing - I have made things before and served it and realised that some of the ingredients were in the fridge. Whoops. The bonus was making it again.
I love laksas - yours sounds delicious and can't wait to see it. What a great lunch, it sounds yummo. Do you make one large batch of soup or make a new one each time?
I had never made it before, and my friend arrived and we were talking - as I had to photograph it I put the bowl of ingredients to the other side of the hot plates, and after finishing it all, I found the bowl! Made just the soup part again and had it for lunch the next few days....delicious
I have made laksa soup once, but it was terribly spicy, so I haven't been game to try it again. I know that I can adjust the ingredients to suit my taste, but the first time I make something, I always make it according to the recipe, and got quite a hot shock !! I might try it again, with a little less red curry paste this time. Usually I am okay with curries and spicy food, but this time, WOW !!! It burnt the ' shivers ' off my 'timbers '.
I have only made a totally seafood free variant with medium heat, using chicken as an ingredient. I am allergic to several of the basic ingredients so can never eat this when out, as it always has seafood paste, or fish sauce, as well as often having egg in it! It is NOT my favourite soup at all, although I do enjoy my own when I have it.
