Do you substitute butter in cooking? If so, with what?

We all know butter's not that great for the waistline, but oh so good for the taste. Do you use it for cooking, or do you substitute butter in recipes? If so, with what?

I am with you. Ever since i found out that margarine is one molecule away from being plastic i have stopped using it.

Oh! Vee.......I think your poster says it ALL about marg. I'm so pleased I stopped eating it years' ago. I'd only been using it for a few years', on medical advice, at the time.

Butter or ghee for me. I can't imagine something like shortbread made without butter. I have never been a margarine eater.

For baking I always use margarine, for cooking I use a very low fat dairy spread, and for greasing I use an 'easy release', product.
I don't substitute butter for anything. I don't like marge and I have a sneaky suspicion it's not all it's cracked up to be. I will now share some memes. Sorry for the excess, but I can't decide which one I like best.

I only use Olive Oil, in everything.
We don't use any butter(except once a year when I make soup).
I never buy any kind of Marg etc.
Anything that needs butter, I don't use the recipe.
Oh! jonaj, when M/W ovens became all the rage in the early '80's, I baked a cake which called for oil in it. It baked to perfection, but it was beyond foul, to my 'butter-raised' taste-buds!
Used Butter next time, & was delicious! Trial, & error somewhat?

I never make cakes at all...I never bake, but I would use butter only if I did I'm hearing ya :)

I don't eat dairy so I use vegetable oils or Nuttalex (a butter substitute made from sunflower oil). There is a buttery version that tastes indistinguishable from butter in baking.
I have heard good things about Nuttelex. Does it have much of a flavor if you were to say, use it for eggs?

There are a couple of different types, but the buttery one tastes buttery.

Nope. Love my Butter!

Stopped eating Marg. when it started to make me nauseous, due oil in it.
Don't use EVOO either, as that, too, makes me feel quite ill.

I use Ghee for making Pancakes only.
I ave NEVER used butter in cooking. I use extra virgin olive oil or margarine, so l guess its just what you get used to. When I first started cooking, none of the recipes I used called for butter, so I never used it. I have no idea about the taste of butter, since I have never used it. The modern day recipes just don't mention butter at all. My mother and mother in law don't use it either, so I never saw the need.

In baking I use butter because substitutes don't give as good a product. For frying I use olive or grapeseed oil but some things like mushrooms I still fry in butter for the taste. I have high cholesterol so it is not just about taste. I have never cooked with margarine. I have never seen the value in that product. If you take the butter out of the fridge it doesn't take long to soften up.
No I do not as I do not like un natural products like margarine, so always use butter or oil for everything.
