Do you tend to use canned or dry lentils/ beans/ legumes when cooking, and why?

I usually boil up a large portion and freeze them for later use. No canned beans for me.

I think I prefer to do my own but I'm not averse to tinned ones. I love home made baked beans though.

I will dig it out for you Vee, and if I can't find it I will get my nephew's wife's recipe . . . hers are to die for!! (Why do we always think other peoples' are better?)

I definitely try to use dry legumes wherever possible, but there is something to be said for simply opening a can and rinsing when you are in a hurry!
I prefer most things dried, but chick peas I prefer in a can. Don't ask me why. It's just the way it is.

While you're waiting for me to dig out the baked bean recipe . . . these are divine!
Persian Lamb Patties
500g lamb mince
2 tablespoons fruit chutney
2 tablespoons plain yoghurt
1 good handful of fresh mint
1 sprig of rosemary
1 teaspoon ground cinnamon
Juice of half a lime
Combine ingredients in a food processor and blend until they come together. Shape into patties and cook. Serve with salad leaves, flat bread and 1/2 a grilled lime per person to squeeze over before eating.

Thanks so much Rice. If I had known the trouble you needed to go to, then I would've said don't worry about it...is the mint very prominent in the recipe you've given me here?

Well, Vee, the yoghurt does tend to neutralise it quite a bit, but knowing that you are not keen, perhaps just put a small handful. This recipe was given to me by a Persian lady and it means a BIG double handful. The large amount is to balance the rosemary. I find it a lovely refreshing meal and I have also used chicken mince with great success.

Love them cold on fresh, buttered bread, or toast.

NO others, of ANY description! Intense dislike!

I use canned beans and lentils', purely for the convenience. They are already cooked. No need to roast etc. Preparing a meal takes long enough without having to prepare the beans as well, before even starting the meal. If you rinse them thoroughly, there is nothing wrong with them. Like all canned goods, they have the same nutritional content.
We buy dried lentils because they're cheaper, but I can't be bothered soaking beans and there's a risk with some of them that they'll be poisonous if you don't do it for long enough.
For those lovers of baked beans, here is a divine and 100% natural homemade version I highly recommend!
I definitely prefer to use dried ones. As much as possible I try to avoid processed food, including canned items.

I definitely prefer dry ones, although I'll resort to canned if I'm in a hurry.
I prefer either, sometimes it depends on the time a have, but if I would have to choose I would prefer to boil them.
