I think if you involve children in food preparation, they are more likely to eat their vegies. You can also try getting them to grow some vegetables or herbs. If the kids are too young, then perhaps making their meals into pictures using vegies may help.
Make the vegetables interesting not just bland for example baked vegies, vegetable chips, dips and don't let them eat too many processed/packaged sweets.
Offer lots of variation, meals that include veges in the main dish, and if you must, grate and hide...
Corn fritters! Make them into patty shapes and voila, vegie burger!
Hide them if they won't eat them.

Put them in vegetarian burgers, and other dishes where they are not visible and the taste blends in with the other ingredients.

My kids just would not eat vegetables -they didnt like them, and there was not a lot I could do unless I did something like this.

Presentation is very important and including them in the preparation process helps too. Go one step further and get them to grow their own vegetables and I guarantee they will eat them straight off the bush/vine/tree. This gives them ownership and it is fun to watch plants grow and turn into something wonderful to eat.

Great ideas. Thanks. :)

As old as I am, I have no idea. My kid ate everything. My (step) grandchild eats nothing fresh, green or good just like his mother and her mother. Makes babysitting an even more frustrating chore :(

That's unfortunate. It just makes good sense to model healthy eating to one's own children. My uncle was telling me about a time he took his girls camping. They went with another family—friends of theirs. Anyway, he prepared something with fruit and veg for his girls to eat, and the children of the other family asked what the heck they were eating! Now that is sad.

Good grief . . ! Yes, that is sad.
