Eggplant is one of the most versatile vegetable which can be grilled, baked, boiled, fried, sauteed, used as filling, used as paste/dips, can even be used in salads, can be used in traditional casseroles, can be mixed with yogurt, can be a pizza topping or added to pasta, and the best part is that it enhances the taste of anything it is added to. I LOVE eggplant, even though I am not vegetarian.
