I can never make my mind up; I like so many different toppings. My favourite pizzas are actually the ones I make myself: thin base made with yoghurt in the dough, reduced tinned tomatoes for the sauce, cheddar cheese rather than mozzarella, and a chorizo and mushroom topping.
A thin and crispy base, as opposed to feeling like you are eating a loaf of bread . . . and a crème fraîche sauce with bbq chicken, capsicum, spinach, pineapple, cheese, garlic, bacon and Kalamata olives as I can't stand the Spanish black ones. No anchovies either.
I start with a thin crust, tomato sauce, onions, green peppers, mushrooms, spices, at least 4 different cheeses, anchovies, olives, both green and black, pineapple, bacon, sausage,more cheese, I think that's about it.
I have to start with a thin base(when I make my own pizza I use a pita bread for the base!!) I like a rich tomato base,then thin Masdaam cheese slices, roast chicken, baby spinach leaves,FRESH sliced baby truss tomatoes, capsicum, halved pitted kalamatta olives(NOT those silly little black salty rings which many outlets call olives!) all topped with a small amount of mozzarella and sprinkled with fresh garden herbs such as oregano,italian parsley, and garlic chives! Oh!!! and a touch of freshly cracked black pepper !!! DONE!!!
My perfect pizza is either a pre prepared base from the supermarket or pitta bread as I prefer the base to be thin. Topping would be BBQ sauce for the base if having chicken and mushroom with mozzarella cheese, or all meats with same base and Kalamata olives, or fresh and sundried tomatoes on tomato and garlic base with more garlic, Kalamata olives and peperoni and small amount of cheese
A nice thin crusty base.
My personal favourite is a Margarita pizza or one of the pizza makers who has 5 various cheeses on top, I some times add my own tomato sauce topping, either crushed tomato's or a passata tomato sauce.
Their used to be a long time ago a softer thicker base known as a Pan Pizza, they were nice but for some reason just dropped off the menu
I enjoy those that are quoted as Wood fired oven cooked.
They are bought when offered at special price and regarded as a treat and good when fresh, never taste good when reheated, so sometimes break a frozen pizza in half rather than waste any leftovers.
Mushrooms are always great on pizza's .
My wife's favourite is Hawaiian!
