I use coconut sugar in baking which is unprocessed (unlike regular cane sugar.

In my porridge I use either coconut syrup or agave , both of which are, I believe, healthier than the processed can sugar. But who knows, in a few years, "they" whoever they might be, will probably say these you beaut new things, are just as bad for you as processed cane sugar!

I occasionally use caster sugar in baking -the other day I made toffee and used the coconut sugar but it did not set! though that was probably the fault of the cook and not the sugar -did not know at the time, how to test for it being done -read about it after -like the horse bolted!!!

I have often read of your use of Coconut sugar.I am sure that I would really like this, but where can it be bought? Do I need to go to a specialty store for it?
by Jules
Jules, I go to a place that sells all herbs, spices etc in big sacks...there are several here but I think Coles and Woolworths now have it in an organic section.
It is more expensive than the way I buy it and it is expensive compared to processed sugar anyway.

Thanks so much Finy! I have been thinking about this since I sent my question to you,and now I realise that we have a new 'health and bulk supplies' place just around the corner from me! I did expect it to be dearer than normal sugar,so at least now I shall be prepared.
by Jules
Coles and Woolies are both selling it now. Coles have a whole section of coconut based products and Woolies have it with the normal sugar, I just saw it a couple of days ago.

Primarily cane sugar.
Nothing in drinks. With food it depends what it is. I use different types of sugar in baked goods, or sometimes blackstrap molasses or fruit puree.
I use Stevia in my tea, but apart from that, I try not to add extra sugar to anything.
I use Truvia, which is a natural sweetener from the stevia plant and contains no calories. Tests have also shown that it has no effect on your blood sugar levels. As it is about 600 times sweeter than sugar, you only need one tbsp to the equivalent of 50g sugar.
Wrong! My son in law and I are both diabetic. Stevia puts his blood sugar through the roof and has no effect on me. If a person is sensitive to the ragweed family, as it turns out he is, then Stevia is as bad as sugar. Beware of and test everything as I truly thought Steveia was going to be the saviour of the diabetics and we could not fathom why his blood sugar was going haywire. People who are not diabetic can suffer other symptoms from ragweed allergies - headaches, nausea, diarhoea etc. :((

I never take any of the latest reports for granted,as I have so many allergies and health issues. I do believe that Caution is the key for me.I will often try just a small amount of something and wait to see the response from my system. Items which I know are related to things I am allergic to,even if distantly related,I do not touch at all. What may work for one person, does not necessarily work for another with the same health issues,so it is extremely important not to accept 'blanket' comments as being utter truth!
by Jules
Rice - That's interesting, but as long as you don't have diabetes or allergies it is absolutely fine. I think the stuff is brilliant, but as you said, it all comes down to how individuals react.

Jules - I don't take it as blanket truth; I accept that it was only a small study, but it was also one that was shown in a documentary, rather than something you just hear about in the news. That gives me more confidence because I can see the participants, can see what the experiment involves, and see the results shown visually. Of course on a wider spectrum it is not going to be the same for everyone, but I think it can be used as a guideline, especially if you don't suffer from health conditions or allergies. The study compared a variety of artificial sweeteners with natural sweeteners and normal processed sugar, and it showed that artificial sweeteners made the participants blood sugar levels rise more than normal sugar, while the natural sweetener not at all.
Luckily, I don't have sugar in my tea, as tea is my primary beverage and I have always preferred the taste of fresh, dark, unsweetened tea. As a diabetic, I am supposed to have no "baddies" . . . easier said than done :(
by Rice
Not ALL 'baddies' are sweet,so go on, enjoy some of them !!! Oh dear.... I guess the Salty treats are 'baddies' too in their own way, aren't they?!!!!
by Jules
Well, I sort of figure that something like honey glazed carrots has to be better for me than a bag of jelly babies, so I try to make things I like into treats. I do love to crunch into a capsicum and fresh veges too . . they are lovely and good for me. I just need to stay away from the shops. (or develop a morbid fear of sugar and chocolate!)
by Rice
Staying away from the shops would be so hard!!! But fearing chocolate would be worse!!!! Hee hee hee!!!

I live very dangerously!!!
I tend to use raw sugar or honey for many things, particularly in cups of tea.I use such a small amount that I really am not concerned about this usage. I also love the taste of very dark sugar and my favourite sweet stuff is Condensed Milk ,but I just like to pig out on this rather than use it to sweeten other items!!! Dreadful,I know, but again,I do not have it often so it is a real treat! I have actually grown Stevia just for the fun of it; it is extremely sweet,I don't use it though,as I just don't like the commercial Stevia which is available. For many recipes I do also use Caster sugar, the only white sugar I ever have in my pantry.
Jules ME TOO -sweetened condensed milk, along with possibly bacon are my favourite foods -I do not buy the milk anymore as I just cannot help myself if I have it in the house, yet it really is sickly sweet!

Ohhhh. YUM. If I opened a can . . . you woud find me dead on the floor . . . . I would eat THE LOT . . !!!! Willpower has always been a problem for me with sweets, but now if I have too much I feel very unwell, so I need to heed the warning bells.

Castor sugar, or Brown Sugar in Recipes.
Raw sugar in Tea, & Coffee.
Glucodin on Rice Bubbles, & Milk. On Pawpaw, & Rockmelon, with OJ, too.
Passionfruit on Pawpaw, as well.
Brown Sugar, with Cream, on Porridge.

How sweet it is!
One has gotta die of 'something', so might as well enjoy what one likes!
Raw honey anyday.
