I could live off eggs - love them. I think I have already told this story in another question - I used to travel back "home" to Sydney regularly while my parents were alive.
One day a friend of my parent's turned up with a dozen hard boiled eggs for me!
I think i ate 6 and decided to keep some for later and not have them all at once.
I do not know how many I could eat, but easily 6 - I like them done all ways - just put up a recipe on recipe Yum for using eggs in different ways!
Love EGGS - if only they did not have cholesterol. odd, as they are so healthy in so many other ways.
Now my kid's chickens and ducks are laying again, and they turned up yesterday with some fresh duck and chicken eggs - lovely!!
If the eggs were poached, I could probably eat 3 or 4 in one sitting. After that , I tend to get a bit too full. Protein is great for that reason. I don't tend to eat eggs any way other than poached, but will sometimes have scrambled. I use eggs all the time in my cooking and make my own quiches and frittata. Those frittata take about 8 eggs !!! At least I am just having one slice and not all 8 at once. I bought one of those microwave poached egg cookers by Decor in an effort to get the perfect poached egg. I don't think much of it. I would prefer to make mine the old way.
I think I could probably eat 4 or 5 , maybe 6, hard boiled eggs if I was particularly hungry. Usually I would have a serve of three soft boiled eggs with toast, scrambled or in an omelette, two if poached. I have my own happy chooks and give away so many eggs.
I cook mini quiche in muffin trays and I could eat those all day. When I cook them for guests I have to remember to put a couple aside for myself as they disappear very quickly. The empty tray is returned to the kitchen in only a couple of minutes. Maybe it's partly because they are easily eaten in a few bites.
I'd just like to eat 1 a day, but we o ly eat about 3 a week each. Not because of 'health reasons, but we're 'between cars at the moment, so we can't be carrying hone boxes of eggs every week on public transport with all the other food shopping we need to buy!
