How do you peel your ginger?

With a knife like the one in the picture. It usually has tough skin and I can get quite close to it with one of those.
I actually never peel my ginger...I just grate it and throw it into whatever I'm cooking.
I don't usually cook with ginger, but my husband does and he uses a spoon to peel it. It sounds weird but apparently it works quite well, better than using a knife.
I never buy fresh ginger, as I don't like it. I prefer to use ground ginger, which I use in baking.
I'm not a fan of ginger. Eek.

Sometimes I use a peeler, other times I just cut off the scungy bits and blitz it, skin and all, in the thermomix. We're having the latter in lunch today :D salmon with ginger and shallots. MmMmmMmmMM

I dont generally buy fresh ginger as I use the one in the jar -I find if i buy it fresh, I end up throwing most of it out as most recipes I would only use a teaspoon of it.

I tried eating it raw at one stage, but it is not very nice to eat this way even though it is supposedly very healthy!

Yes always peel ginger.
I don't. Not worth the time & effort.
Just buy want I need, pre-prepared. Much easier!
I read just the other day on an Indian cooking website that it is easiest to snap it at the appropriate joins, scrub it clean, place it in a baggie in the freezer and cut or grate what you need. They don't even worry about the peeling part. I have to admit that I have not even noticed the peel in my ginger tea or my stir fry.

I keep my ginger in a paper bag in the freezer. It lasts for years! I used to scrape the skin off with a small knife, but now to save time, I’ll wash it, & leave the skin on!
I cut it in a smaller piece and I peel it with a knife.
