I used to make a lot of cakes and use summer fruits in them.
Recipes were all from my mother, and I made delicious cherry, apricot, plum and grape cakes.
Summer fruit is very versatile as it can be used with sweet and savoury foods to create great recipes.
However, I have not made a summer fruit cake for a year or so now apart from a pavlova that I decorated as per the photo!
I made it for a sick friend and had a tiny piece - DELICIOUS
The only summer fruits I use in cooking are berries. I like a pavlova covered in berries and kiwi fruits. I have also made some raspberry or strawberry flans which are delicious covered in a berry glaze and served with cream. YUM 😋
