Oh yes - mangoes and tomatoes get transformed into a delicious summer chutney. Basil gets transformed into pesto year round and we have a freezer full of passionfruit pulp which we make into cordial or curd - yum.
I didn't preserve anything this year. However I joined a local "Food is free" group and we swap excess fruit and vegies and one fellow made a really nice chutney from everyone's excess tomatoes and shared it around! I'm likely to have an excess of rockmelons in a month or two and I've already let the neighbours know that I will be sharing!
I wish I had a garden to harvest! Seriously, it's a bit o a dream of mine, to turn my black thumb at least partially green. I want very much to lower my impact on the environment and I want growing my own to food to be a part of that. So once I have a garden to harvest, I will certainly be preserving some but I also know I will give away some as well. I will likely split it 50/50.
