I love fresh beetroots in fact, I refuse to eat tinned beetroot. If I've ordered something in a restaurant and it's obviously tinned, I've been known to send it back. I will buy fresh beets every fortnight and will roast roast them and either eat them as a side vegetable, or in a salad or even sliced thinly and placed on top of rice cakes, avocado and chick pea pate.
Only a couple of days ago, my husband brought home about 5kg of beetroot from a work colleague who grows them. My mouth has been salivating at the thought of recipes I can make with the beets - needless to say, stay tuned for an influx of beet recipes from me!
Oh yes, I love them! I'm not fond of peeling them though, so I tend to buy them ready peeled. Pickled beetroot is a necessary ingredient in ham sandwiches, as well as eating lots of fresh as a side dish or in stews.
And the after effects make me giggle, who wouldn't laugh at purple pee and poo? So it's a win at both ends of the process for me :)
Love good Ol' 'Golden Circle' slices, cold, on a burger or sandwich, with meat.
My son loves Beetroot, so if cooking a Corned Meat in the Pressure Cooker, I buy fresh beets, wash them. & roll up in Alfoil to cook with meat. He's in 'heaven' eating that, with freshly made Mashed Spud!
I blend up fresh beetroot and carrot with ginger every morning and hubby & I have a glass each. Ever since I read about it's cancer-fighting properties, I buy a bunch at the market every couple of weeks. Prevention is always better than cure, so the saying goes.
