Yes! A lot of the time they are the main itself. I'm not a vegetarian but I like to eat healthy and include a lot of vegetables in my diet. There are so many tasty recipes out there it will sometimes be many days before I eat meat again, without even realising it.
Most nights we have vegetables with our meals. My husband is the cook and he's a stickler for this. ...... It would be far less frequent if I was cooking. I prefer rice to vegetables although I do love mashed potato (with milk not butter) and green peas (which I orefer to eat raw).
I love vegetables and grow a few in the garden so it is a given that we have vegetables with the main meal which is in the evening. I usually have some veggies at lunch as well and now and then at breakfast time.
Not a great liker of veggies. I do enjoy potato mashed, steamed, roasted or boiled. Punky & carrot roasted.
Beans raw, very cold. Hate peas. Have swede, parsnip, sweet spud, cabbage as Soup ingredients usually. Love my soup, anytime of the year! Consommé with chook or beef! Yummy!
Love fresh lettuce, grated carrot, & cabbage as salad, with Balsamic Vinegar. They must be very cold!

No, I don't eat them with every meal, in the summer I guess I go more for salads, and even that if it's too hot or I've just come back from work I can't be bothered, in the winter time it's a different story, as I make soup for my family, and vegies to go with roasts and other dishes.
